WHere is an easy interpretation of a beverage featured on the seasonal cocktail list. Designed as a party-sized pre-mixed which is bursting full of flavours of a Christmas time, rendering it excellent for a holiday party. Any leftover cordial for breakfast cocktails, sweets, or for another batch of the drink.
The Bikini Cocktail
Serves 10 guests
To make the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Put all the ingredients inside a pan, bring to a light boil, stirring until the sugar dissolves. Next, turn off the burner and leave to cool fully. Transfer to a sterilised bottle, cap it and store in the fridge, it will last for up to a month.
To make Premix: Mix the specified liquids in a big jug, leave to sit for one hour, then strain best through muslin, making it completely strained.
To serve: Measure 85ml from the batch mix into your cocktail shaker packed with ice, and stir carefully for one minute to chill. Strain into a chilled martini glass or a similar vessel, top with the cranberries and finish by giving it a light spray of the essential oil over the top.
